Savor flavorful Ground Beef Enchiladas, filled with seasoned beef and cheese, topped with enchilada sauce. Perfect for a quick and satisfying dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese, divided
  • 1 can (10 oz) enchilada sauce
  • 8 large flour tortillas
  • 2 tbsp olive oil
  • Fresh cilantro and sour cream for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  • Add ground beef to the skillet and cook until browned. Drain excess fat.
  • Stir in taco seasoning and black beans, cooking for another 2-3 minutes.
  • Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  • Spoon the beef mixture into the center of each tortilla, sprinkle with cheese, and roll up tightly.
  • Place the enchiladas seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
  • Bake for 20 minutes, until the cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve with sour cream.

Notes

  • For a spicier version, use hot enchilada sauce or add diced jalapeños to the beef mixture.
  • Substitute ground turkey or chicken for a leaner option.
