Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 2 cups shredded cheddar cheese, divided
- 1 can (10 oz) enchilada sauce
- 8 large flour tortillas
- 2 tbsp olive oil
- Fresh cilantro and sour cream for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in taco seasoning and black beans, cooking for another 2-3 minutes.
- Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
- Spoon the beef mixture into the center of each tortilla, sprinkle with cheese, and roll up tightly.
- Place the enchiladas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
- Bake for 20 minutes, until the cheese is melted and bubbly.
- Garnish with fresh cilantro and serve with sour cream.
Notes
- For a spicier version, use hot enchilada sauce or add diced jalapeños to the beef mixture.
- Substitute ground turkey or chicken for a leaner option.
