  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground sausage and cook until browned, breaking it into pieces.
  • Add diced onion, bell pepper, and garlic. Cook until the vegetables are soft, about 5 minutes.
  • Stir in rice, paprika, Italian seasoning, black pepper, and red pepper flakes. Cook for 1-2 minutes to toast the rice.
  • Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat to low.
  • Cover and simmer for 20-25 minutes, or until the rice is tender and liquid is absorbed.
  • Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
