Ingredients
- 1 package of spaghetti (about 16 oz.)
- 1/4 cup vegetable oil or olive oil
- 1 onion, finely chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1/2 cup tomato paste or tomato sauce
- 1-2 smoked herring filets or 2-3 hot dogs, sliced
- 1 teaspoon adobo seasoning or seasoned salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional for extra spice)
- 2 green onions, chopped
- Fresh parsley, for garnish
Instructions
- Cook the spaghetti according to the package directions until al dente. Drain and set aside.
- If using smoked herring, soak them in hot water for about 20-30 minutes to reduce the saltiness. Remove any bones and shred the herring.
- In a large skillet, heat the oil over medium heat. Add the onions, bell pepper, and garlic. Sauté until the onions are translucent.
- Add the tomato paste or sauce to the skillet and mix well. Add about 1/2 to 1 cup of water to get a sauce consistency.
- Add the sliced hot dogs or shredded herring to the skillet. Mix well.
- Season with adobo or seasoned salt, black pepper, and red pepper flakes.
- Add the cooked spaghetti to the skillet and toss everything together until the spaghetti is well-coated and heated through.
- Garnish with chopped green onions and fresh parsley.
- Serve hot.

- Smoked herring (known as "aranso" in Creole) gives a distinctive flavor, but it's quite salty. Always soak and rinse well before use.
