Description

Ingredients

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Sesame seeds (optional, for garnish)


Instructions

  1. In a small bowl, whisk together soy sauce, honey, cornstarch, and chicken broth. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add sliced chicken, season with salt and pepper, and cook until browned and cooked through. Remove from skillet.
  4. In the same skillet, add a little more oil if needed, then sauté garlic and ginger for 1 minute.
  5. Add broccoli and stir-fry for about 4-5 minutes until just tender.
  6. Return chicken to the skillet, pour in the sauce, and stir well.
  7. Cook for another 2-3 minutes until the sauce thickens.
  8. Garnish with sesame seeds if desired. Serve hot.

Notes

You can add other vegetables like bell peppers or snap peas.

Use tamari for a gluten-free version.

Great served over brown rice or quinoa.
