Ingredients

  • 2 lbs baby potatoes, halved
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, diced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  • Boil the halved baby potatoes until tender, about 10-12 minutes. Drain and let cool slightly.
  • In a large bowl, whisk together Greek yogurt, olive oil, Dijon mustard, and lemon juice.
  • Add the boiled potatoes, red onion, celery, and fresh dill to the bowl.
  • Toss gently to combine all ingredients.
  • Season with salt and pepper to taste.
