Ingredients
- 2 lbs baby potatoes, halved
- 1/2 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, diced
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- Boil the halved baby potatoes until tender, about 10-12 minutes. Drain and let cool slightly.
- In a large bowl, whisk together Greek yogurt, olive oil, Dijon mustard, and lemon juice.
- Add the boiled potatoes, red onion, celery, and fresh dill to the bowl.
- Toss gently to combine all ingredients.
- Season with salt and pepper to taste.
- Serve immediately or chill for later.
