Instructions
- Prepare Cream Cheese Filling: In a bowl, mix softened cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Make Muffin Batter: Preheat oven to 350°F (175°C). Line a muffin tin with paper liners. In a large bowl, whisk together flour, baking powder, baking soda, spices, and salt. In another bowl, combine pumpkin puree, sugars, eggs, oil, and vanilla until smooth. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Assemble Muffins: Fill each muffin cup with batter, about 3/4 full. Add a spoonful of cream cheese filling to the center of each muffin. Optionally, sprinkle pumpkin seeds on top.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted into the muffin (not the cream cheese) comes out clean. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
