Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 small onion, chopped
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp chili powder

Instructions

  1. In a skillet, brown the ground beef until fully cooked. Drain any excess grease.
  2. Add the cooked beef to the crockpot.
  3. Add the diced potatoes, onion, kidney beans, corn, and diced tomatoes to the crockpot.
  4. In a small bowl, mix together beef broth, tomato paste, garlic powder, paprika, chili powder, salt, and pepper. Pour over the ingredients in the crockpot.
  5. Stir everything together and set the crockpot on low for 6-8 hours or on high for 3-4 hours.
  6. Once the potatoes are tender and the stew is heated through, serve warm with crusty bread or biscuits.
