Ingredients

  • For the Cupcakes:
    • 1 1/2 cups all-purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 cup unsalted butter, room temperature
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1/2 cup milk
    • 1/4 cup cocoa powder
    • 1/4 cup strawberry puree (or 1/4 cup fresh strawberries, blended)
  • For the Frosting:
    • 1 1/2 cups heavy cream
    • 1/4 cup powdered sugar
    • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  • Add dry ingredients to the butter mixture, alternating with milk, beginning and ending with dry ingredients. Divide the batter into three equal parts.
  • To one part, mix in cocoa powder. To the second part, mix in strawberry puree. Leave the third part plain.
  • Spoon a layer of chocolate batter into each cupcake liner, followed by vanilla batter, and top with strawberry batter.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  • For the frosting, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Frost the cooled cupcakes.

Notes

  • For a more intense strawberry flavor, add a drop of strawberry extract to the strawberry batter.
  • Use food coloring if you want more vibrant layers.
