Ingredients

  • 2 cups fresh or frozen pitted cherries
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1 package (14 oz) refrigerated pie crusts or homemade pie crust for double-crust pie
  • 1 tbsp butter, cut into small pieces
  • 1 egg (for egg wash)
  • 1 tbsp sugar (for sprinkling)

Instructions

  • Preheat oven to 425°F (220°C).
  • In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Stir well and let sit for 10 minutes.
  • Roll out one pie crust and fit into a 9-inch pie plate. Pour cherry mixture into the crust and dot with butter pieces.
  • Roll out the second pie crust and place over the filling. Trim and crimp edges to seal. Cut small slits in the top crust to allow steam to escape.
  • Beat egg and brush over the top crust. Sprinkle with sugar.
  • Bake for 45-50 minutes, or until crust is golden brown and filling is bubbly.
  • Cool on a wire rack for at least 2 hours before serving.
