Ingredients
2 boneless, skinless chicken breasts (cut into bite-sized pieces)
1 cup BBQ sauce (your favorite brand)
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic (minced)
1 teaspoon smoked paprika
Salt & black pepper to taste
2 cups cooked white or brown rice
Green onions & sesame seeds for garnish (optional)
Instructions
In a bowl, mix BBQ sauce, honey, minced garlic, smoked paprika, salt, and pepper.
Add chicken pieces to the marinade and coat evenly. Let sit for at least 15–30 minutes (or overnight).
Heat olive oil in a skillet over medium heat. Add marinated chicken and cook for 7–10 minutes, turning until golden and fully cooked.
Pour remaining sauce into the pan and simmer for 2–3 minutes until thickened and sticky.
Serve over a bed of freshly cooked rice. Garnish with green onions and sesame seeds if desired.
Notes
Substitute chicken breast with chicken thighs for extra juiciness.
Add steamed veggies like broccoli or bell peppers for a balanced bowl.
Use leftover grilled chicken to speed up prep time.
Works well with jasmine rice or quinoa as alternatives.
