Description

Savor the taste of Hawaii with Huli Huli Chicken. This recipe features tender chicken marinated in a delicious blend of soy sauce, pineapple juice, brown sugar, and ginger. Ideal for grilling or baking, it's a perfect dish for any gathering.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  • In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, garlic, ginger, rice vinegar, and sesame oil until well combined.
  • Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken for 6-8 minutes per side, or until the chicken is cooked through and has a nice char.
  • Alternatively, preheat the oven to 375°F (190°C). Place the chicken on a baking sheet and bake for 25-30 minutes, or until cooked through.
  • Garnish with chopped green onions before serving.

Notes

  • Serve with rice and a side of grilled pineapple for an authentic Hawaiian meal.
  • For extra flavor, baste the chicken with reserved marinade during grilling, making sure it reaches a boil if using previously used marinade.
