Ingredients
- 4 boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 green onions, chopped (for garnish)
Instructions
- In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, garlic, ginger, rice vinegar, and sesame oil until well combined.
- Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-8 minutes per side, or until the chicken is cooked through and has a nice char.
- Alternatively, preheat the oven to 375°F (190°C). Place the chicken on a baking sheet and bake for 25-30 minutes, or until cooked through.
- Garnish with chopped green onions before serving.
