Ingredients
- 3 lbs beef chuck roast
- 1 tbsp olive oil
- 4 cups beef broth
- 1 cup water
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 jar (16 oz) giardiniera
- 6 crusty rolls
Instructions
- Preheat the oven to 325°F (165°C).
- Heat the olive oil in a large oven-safe pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Add the beef broth, water, Italian seasoning, garlic powder, onion powder, dried oregano, dried basil, red pepper flakes, and black pepper to the pot. Bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours, or until the beef is tender and can be easily shredded.
- Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak up the juices.
- Slice the crusty rolls and fill them with the shredded beef. Top with giardiniera.
