Ingredients

  • 3 lbs beef chuck roast
  • 1 tbsp olive oil
  • 4 cups beef broth
  • 1 cup water
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1 jar (16 oz) giardiniera
  • 6 crusty rolls

Instructions

  • Preheat the oven to 325°F (165°C).
  • Heat the olive oil in a large oven-safe pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
  • Add the beef broth, water, Italian seasoning, garlic powder, onion powder, dried oregano, dried basil, red pepper flakes, and black pepper to the pot. Bring to a simmer.
  • Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours, or until the beef is tender and can be easily shredded.
  • Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak up the juices.
  • Slice the crusty rolls and fill them with the shredded beef. Top with giardiniera.

  • For extra flavor, dip the sandwich in the beef broth before eating.
