Ingredients

  • 1 large Italian sub roll or baguette
  • 4 slices salami
  • 4 slices pepperoni
  • 4 slices capicola or ham
  • 4 slices provolone cheese
  • 1 cup iceberg lettuce, shredded
  • 1 small tomato, thinly sliced
  • 2 tbsp red onion, thinly sliced
  • 2 tbsp banana peppers, chopped
  • 2 tbsp mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • Slice the sub roll lengthwise and place it on a baking sheet.
  • Layer the salami, pepperoni, capicola (or ham), and provolone cheese inside the roll.
  • Toast the sandwich in the oven for 5-7 minutes, or until the bread is lightly crisped and the cheese is melted.
  • In a mixing bowl, combine shredded lettuce, red onion, banana peppers, mayonnaise, red wine vinegar, Dijon mustard, Italian seasoning, salt, and pepper. Mix well to create the grinder salad.
  • Remove the sandwich from the oven and add sliced tomatoes.
  • Top the sandwich with the prepared grinder salad.
  • Close the sandwich, slice in half, and serve immediately.
