Ingredients

  • 3 cups cooked chicken, shredded
  • 10 oz can diced tomatoes with green chilies (Rotel)
  • 10 oz can cream of mushroom soup
  • 10 oz can cream of chicken soup
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 12 corn tortillas, torn into pieces
  • 2 cups shredded cheddar cheese
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 tbsp butter

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, sauté onions and bell peppers in butter until soft.
  • In a large bowl, combine soups, diced tomatoes with green chilies, chicken broth, chili powder, garlic powder, and cumin.
  • Layer half the torn tortillas in a greased 9x13-inch baking dish.
  • Spread half the cooked chicken over the tortillas, followed by half of the soup mixture and half of the cheese.
  • Repeat the layers with the remaining tortillas, chicken, soup mixture, and cheese.
  • Bake for 30-35 minutes or until bubbly and golden. Let rest for 10 minutes before serving.

Notes

You can add a can of drained black beans or corn for extra flavor. Adjust the level of spice by adding more chili powder or jalapeños if desired.
