Ingredients
- 3 cups cooked chicken, shredded
- 10 oz can diced tomatoes with green chilies (Rotel)
- 10 oz can cream of mushroom soup
- 10 oz can cream of chicken soup
- 1 cup chicken broth
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- 12 corn tortillas, torn into pieces
- 2 cups shredded cheddar cheese
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 tbsp butter
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, sauté onions and bell peppers in butter until soft.
- In a large bowl, combine soups, diced tomatoes with green chilies, chicken broth, chili powder, garlic powder, and cumin.
- Layer half the torn tortillas in a greased 9x13-inch baking dish.
- Spread half the cooked chicken over the tortillas, followed by half of the soup mixture and half of the cheese.
- Repeat the layers with the remaining tortillas, chicken, soup mixture, and cheese.
- Bake for 30-35 minutes or until bubbly and golden. Let rest for 10 minutes before serving.
Notes
You can add a can of drained black beans or corn for extra flavor. Adjust the level of spice by adding more chili powder or jalapeños if desired.
