Ingredients

  1. 4 King salmon fillets, about 6 oz each, skin on
  2. Salt and freshly ground pepper to taste
  3. 1 tbsp olive oil
  4. 1/4 cup fresh breadcrumbs
  5. 2 tbsp fresh parsley, finely chopped
  6. 1 tbsp fresh dill, finely chopped
  7. Zest of 1 lemon
  8. For the Lemon Butter Sauce:
    • 1/4 cup white wine or chicken broth
    • Juice of 1 lemon
    • 1/4 cup heavy cream
    • 5 tbsp unsalted butter, cubed
    • Salt and pepper to taste

Instructions

  1. Prepare the Herb Crust: In a bowl, combine breadcrumbs, parsley, dill, and lemon zest. Mix well.
  2. Season and Sear the Salmon: Season the salmon fillets with salt and pepper. In a skillet over medium-high heat, add olive oil. Once hot, place the salmon fillets skin-side down and cook for about 3 minutes or until the skin is crispy. Turn the fillets and cook for another 2 minutes.
  3. Add the Herb Crust: Press the breadcrumb mixture onto the top side of each salmon fillet. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 5-7 minutes or until salmon is cooked through but still slightly pink in the center.
  4. Make the Lemon Butter Sauce: In a saucepan, combine white wine (or chicken broth) and lemon juice. Bring to a simmer and reduce by half. Lower the heat and add the heavy cream. Once the mixture is warm, slowly whisk in the butter cubes until the sauce is smooth and emulsified. Season with salt and pepper.
  5. Serve: Plate each salmon fillet and drizzle with the lemon butter sauce.
