This Lasagna Soup recipe brings all the comforting flavors of traditional lasagna into a rich, hearty soup. Made with ground beef, pasta, tomatoes, and a blend of Italian cheeses, this dish is perfect for a cozy meal that’s ready in just 30 minutes.


Ingredients

  • Ground beef
  • Onion
  • Garlic
  • Olive oil
  • Crushed tomatoes
  • Tomato paste
  • Chicken or beef broth
  • Lasagna noodles (broken into pieces)
  • Italian seasoning
  • Basil
  • Oregano
  • Salt
  • Pepper
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  • Heat olive oil in a large pot, then brown the ground beef. Add chopped onions and garlic; sauté until softened.
  • Stir in crushed tomatoes, tomato paste, broth, and seasonings (Italian seasoning, basil, oregano, salt, and pepper).
  • Bring to a boil, then add broken lasagna noodles. Cook until noodles are al dente, about 10-12 minutes.
  • In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  • Serve the soup hot, with a dollop of the cheese mixture on top. Garnish with fresh parsley.

Notes

  • Substitute ground turkey or sausage for the beef if preferred.
