Description

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 1 tablespoon lemon zest
  • 6 tablespoons unsalted butter, cut into small pieces

Instructions

  • In a medium saucepan, whisk together eggs and sugar until well combined.
  • Add lemon juice and lemon zest, and whisk until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10 minutes.
  • Remove from heat and immediately stir in butter, one piece at a time, until fully melted and smooth.
  • Strain the lemon curd through a fine-mesh sieve into a bowl to remove any lumps.
  • Let cool to room temperature, then cover and refrigerate until ready to use.
