Ingredients
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1 tablespoon lemon zest
- 6 tablespoons unsalted butter, cut into small pieces
Instructions
- In a medium saucepan, whisk together eggs and sugar until well combined.
- Add lemon juice and lemon zest, and whisk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10 minutes.
- Remove from heat and immediately stir in butter, one piece at a time, until fully melted and smooth.
- Strain the lemon curd through a fine-mesh sieve into a bowl to remove any lumps.
- Let cool to room temperature, then cover and refrigerate until ready to use.
