Ingredients
2 cups (480ml) heavy cream
¾ cup (150g) granulated sugar
5 tablespoons freshly squeezed lemon juice (about 2 lemons)
Optional: lemon zest for garnish
Instructions
In a saucepan, combine heavy cream and sugar over medium heat.
Stir continuously until sugar dissolves and mixture comes to a gentle boil.
Let boil gently for 3 minutes.
Remove from heat and stir in lemon juice.
Let mixture sit for 10 minutes.
Pour into serving glasses or ramekins.
Chill in the fridge for at least 4 hours or until set.
Garnish with lemon zest if desired before serving.
