Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup plain bread crumbs
  • 1/4 cup panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 cup buttermilk
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 cup chicken broth
  • 1/2 cup heavy cream


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a shallow dish, mix together the Parmesan cheese, plain bread crumbs, panko bread crumbs, garlic powder, onion powder, and dried basil.
  4. Dip each chicken breast in the buttermilk, ensuring it's fully coated, then dredge in the Parmesan mixture, pressing it onto the chicken to adhere well.
  5. In a large oven-safe skillet over medium-high heat, heat the olive oil and butter. Once the butter has melted and is foamy, add the chicken breasts. Cook for about 3-4 minutes on each side, or until they're golden brown.
  6. Pour chicken broth and heavy cream around the chicken breasts in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
  8. Once cooked, sprinkle with fresh parsley and serve hot.

Notes

  • For an extra kick, add a pinch of red pepper flakes to the breadcrumb mixture.
