Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 1/4 cup plain bread crumbs
- 1/4 cup panko bread crumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/4 cup fresh parsley, finely chopped
- 1/2 cup buttermilk
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 cup chicken broth
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper on both sides.
- In a shallow dish, mix together the Parmesan cheese, plain bread crumbs, panko bread crumbs, garlic powder, onion powder, and dried basil.
- Dip each chicken breast in the buttermilk, ensuring it's fully coated, then dredge in the Parmesan mixture, pressing it onto the chicken to adhere well.
- In a large oven-safe skillet over medium-high heat, heat the olive oil and butter. Once the butter has melted and is foamy, add the chicken breasts. Cook for about 3-4 minutes on each side, or until they're golden brown.
- Pour chicken broth and heavy cream around the chicken breasts in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
- Once cooked, sprinkle with fresh parsley and serve hot.
Notes
- For an extra kick, add a pinch of red pepper flakes to the breadcrumb mixture.
