Description

Mac and Cheese Meatloaf Casserole blends two comfort food favorites—macaroni and cheese with classic meatloaf—into one hearty, satisfying dish. Layered with ground beef and topped with creamy, cheesy pasta, this casserole is perfect for weeknight dinners or potlucks. Keywords: Mac and Cheese Meatloaf Casserole, meatloaf casserole, mac and cheese bake, comfort food.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups cooked macaroni
  • 2 cups shredded cheddar cheese
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 tsp mustard powder
  • 1/2 tsp paprika
  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the ground beef, breadcrumbs, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
  • Press the meat mixture into the bottom of a greased 9x13 inch baking dish, forming a flat layer. Bake for 20 minutes.
  • While the meatloaf is baking, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  • Gradually add the milk, whisking continuously until thickened. Stir in mustard powder, paprika, and 1 1/2 cups of cheddar cheese, until melted and smooth.
  • Toss the cooked macaroni in the cheese sauce and mix well.
  • Remove the meatloaf from the oven and spread the mac and cheese over the top.
  • Sprinkle the remaining cheddar cheese over the casserole and return to the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley, if desired, and serve hot.

Notes

  • You can substitute ground turkey for a lighter version of the meatloaf base.
  • Add a layer of vegetables like spinach or mushrooms between the meatloaf and mac and cheese for added nutrition.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
