Ingredients

    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons pure vanilla extract
    • 1/2 cup whole milk
    • Zest + fresh juice of 3 medium limes
    • Optional: 2 tablespoons tequila
  • For the Tequila Lime Frosting:
    • 1 cup unsalted butter
    • 4 cups confectioners’ sugar
    • 34 tablespoons tequila
    • 1 teaspoon pure vanilla extract
    • Lime flavoring
    • A pinch of salt
    • Optional garnish: lime slices, lime zest, coarse sugar


Instructions

  1. Preheat the oven and prepare cupcake pans.
  2. Whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy, then add eggs one at a time.
  4. Mix in vanilla, lime zest, and juice. Alternate adding dry ingredients and milk.
  5. Fill cupcake liners and bake until a tester comes out clean. Brush with tequila if desired.
  6. For the frosting, beat butter until creamy. Gradually add sugar, then tequila, vanilla, lime flavoring, and salt. Frost cupcakes and garnish.
