Ingredients

  • 12 oz pasta (linguine or fettuccine)
  • 1 lb large shrimp, peeled and deveined

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  • Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove and set aside.
  • In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  • Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and red pepper flakes (if using), whisking until smooth.
  • Return the cooked shrimp to the skillet, then add the cooked pasta. Toss to coat in the creamy sauce, adding reserved pasta water as needed for desired consistency.
