This Marry Me Shrimp Pasta recipe is a creamy, flavorful dish that pairs tender shrimp with a rich, Parmesan-infused sauce and perfectly cooked pasta. Ideal for date nights or special occasions, it's a quick yet impressive meal to win hearts.
Ingredients
- 12 oz pasta (linguine or fettuccine)
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and red pepper flakes (if using), whisking until smooth.
- Return the cooked shrimp to the skillet, then add the cooked pasta. Toss to coat in the creamy sauce, adding reserved pasta water as needed for desired consistency.
- Garnish with fresh basil and extra Parmesan before serving. Enjoy!
Notes
- Substitute half-and-half for heavy cream for a lighter version.
- Use cherry tomatoes instead of sun-dried tomatoes for a fresher flavor.
- Add a squeeze of lemon juice for a zesty finish.
