Ingredients
For the Meatloaf:
- 1 1/2 lbs ground beef
- 1/2 lb ground pork (optional for added flavor)
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 3/4 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
Instructions
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork (if using), breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined. Do not overmix, or the meatloaf may be dense.
- Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
- Make the Glaze: In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce.
- Top with Glaze: Spread half of the glaze over the top of the meatloaf.
- Bake: Preheat the oven to 375°F (190°C). Bake the meatloaf for 50-60 minutes or until the internal temperature reaches 160°F (70°C). Halfway through baking, spread the remaining glaze over the meatloaf.
- Serve: Allow the meatloaf to rest for 10 minutes before slicing. Serve with mashed potatoes and your favorite vegetables.
