Ingredients
For the meatloaf:
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg, lightly beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 roasted red pepper, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
For the glaze:
- 1/2 cup ketchup
- 2 tablespoons Dijon mustard
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- A dash of hot sauce (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix breadcrumbs and milk. Allow it to soak for 5 minutes.
- In a large mixing bowl, combine the beef, pork, soaked breadcrumbs, egg, onion, garlic, roasted red pepper, parsley, salt, and pepper. Mix until just combined—don't overmix.
- Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
- In a separate bowl, whisk together all the glaze ingredients. Brush half of the glaze over the meatloaf.
- Bake the meatloaf for 45 minutes. Brush with the remaining glaze and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
- Slice and serve!
