Ingredients

For the meatloaf:

  1. 1 lb ground beef
  2. 1/2 lb ground pork
  3. 1/2 cup breadcrumbs
  4. 1/4 cup milk
  5. 1 large egg, lightly beaten
  6. 1 small onion, finely chopped
  7. 2 cloves garlic, minced
  8. 1 roasted red pepper, chopped
  9. 2 tablespoons fresh parsley, chopped
  10. Salt and pepper to taste

For the glaze:

  1. 1/2 cup ketchup
  2. 2 tablespoons Dijon mustard
  3. 2 tablespoons brown sugar
  4. 1 tablespoon Worcestershire sauce
  5. A dash of hot sauce (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix breadcrumbs and milk. Allow it to soak for 5 minutes.
  3. In a large mixing bowl, combine the beef, pork, soaked breadcrumbs, egg, onion, garlic, roasted red pepper, parsley, salt, and pepper. Mix until just combined—don't overmix.
  4. Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
  5. In a separate bowl, whisk together all the glaze ingredients. Brush half of the glaze over the meatloaf.
  6. Bake the meatloaf for 45 minutes. Brush with the remaining glaze and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
  7. Remove from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
  8. Slice and serve!
