This Mediterranean Pasta Salad is a fresh and vibrant dish, filled with colorful vegetables, olives, and feta cheese, all tossed in a zesty lemon-herb dressing. It's perfect for picnics, lunches, or as a healthy side dish.
Ingredients
- 8 ounces penne pasta or any short pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Rinse under cold water and drain.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the dressing.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Sprinkle chopped parsley over the salad and mix gently.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to blend.
- Serve chilled or at room temperature.
Notes
- You can add additional protein such as grilled chicken or chickpeas to make this salad a complete meal.
- For a vegan version, substitute the feta cheese with a vegan alternative or simply omit it.
