Ingredients

  • 4 large eggs
  • 2 large tomatoes, diced
  • 2 green bell peppers, diced
  • 1 large onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: 1-2 green chilies for extra heat

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onions and cook until they are soft and translucent.
  • Add the diced green bell peppers (and green chilies, if using) and cook until they start to soften.
  • Stir in the diced tomatoes and cook until the mixture starts to thicken, about 5-7 minutes.
  • Season with paprika, salt, and pepper.
  • Create small wells in the tomato and pepper mixture and crack the eggs into the wells.
  • Stir gently to scramble the eggs with the vegetables, cooking until the eggs are just set but still slightly runny.

Notes

  • Serve Menemen with warm crusty bread or pita for a complete meal.
  • For a richer flavor, add a sprinkle of feta cheese on top.
