Ingredients

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup uncooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups chicken broth
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the diced onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  • Stir in the uncooked rice, black beans, corn, diced tomatoes, tomato sauce, taco seasoning, and chicken broth. Bring to a simmer.
  • Transfer the mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 25-30 minutes, or until the rice is tender.
  • Remove from the oven, sprinkle with shredded cheese, and bake uncovered for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Serve hot, garnished with fresh cilantro if desired.
