Ingredients
- 1 lb ground beef
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup uncooked white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 packet taco seasoning
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in the uncooked rice, black beans, corn, diced tomatoes, tomato sauce, taco seasoning, and chicken broth. Bring to a simmer.
- Transfer the mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 25-30 minutes, or until the rice is tender.
- Remove from the oven, sprinkle with shredded cheese, and bake uncovered for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with fresh cilantro if desired.
