Ingredients
- 1 lb ground beef
- 1 cup uncooked long-grain rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sauté until softened.
- Add minced garlic and ground beef to the skillet. Cook until the beef is browned and crumbled, then drain excess fat.
- Stir in taco seasoning, uncooked rice, black beans, corn, and diced tomatoes with green chilies.
- Pour in beef broth, bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and sprinkle shredded cheddar cheese on top. Cover for a few minutes until the cheese is melted.
- Garnish with fresh cilantro and lime wedges before serving.
Notes
- For extra flavor, add a splash of lime juice and some chopped jalapeños.
- Substitute ground turkey or chicken for a leaner option.
