Ingredients

  • 1 lb ground beef
  • 1 cup uncooked long-grain rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Instructions

  • In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sauté until softened.
  • Add minced garlic and ground beef to the skillet. Cook until the beef is browned and crumbled, then drain excess fat.
  • Stir in taco seasoning, uncooked rice, black beans, corn, and diced tomatoes with green chilies.
  • Pour in beef broth, bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Remove from heat and sprinkle shredded cheddar cheese on top. Cover for a few minutes until the cheese is melted.
  • Garnish with fresh cilantro and lime wedges before serving.

Notes

  • For extra flavor, add a splash of lime juice and some chopped jalapeños.
