Ingredients

  • 3 cups cooked chicken (shredded)
  • 1 cup salsa (your favorite variety)
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 can corn (15 oz, drained)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 cups crushed tortilla chips
  • Fresh cilantro (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, salsa, black beans, corn, cream of chicken soup, sour cream, cumin, and chili powder. Mix well.
  • Spread half of the chicken mixture into a greased 9x13-inch baking dish.
  • Sprinkle 1 cup of cheese on top, followed by half of the crushed tortilla chips.
  • Layer the remaining chicken mixture over the chips, then top with the remaining cheese and tortilla chips.
  • Bake for 25-30 minutes, until the casserole is hot and bubbly and the cheese is melted.
  • Garnish with fresh cilantro, if desired, and serve.
