Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  • Add ground beef to the skillet and cook until browned. Drain excess fat.
  • Stir in taco seasoning, beef broth, uncooked rice, black beans, corn, and diced tomatoes with green chilies.
  • Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  • Transfer the mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 20 minutes.
  • Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
  • Let cool for 5 minutes before serving.

  • For extra spice, add diced jalapeños or a dash of hot sauce.
