Ingredients
- 1 lb ground beef
- 1 cup uncooked rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 cups beef broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in taco seasoning, beef broth, uncooked rice, black beans, corn, and diced tomatoes with green chilies.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
- Transfer the mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 20 minutes.
- Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- For extra spice, add diced jalapeños or a dash of hot sauce.
- Substitute ground turkey or chicken for a leaner option.
