Ingredients

  1. Meat Layer:
    • 1 lb ground beef or turkey
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 packet taco seasoning
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 cup corn kernels (fresh, frozen, or canned)
  2. Cheese Layer:
    • 2 cups shredded cheddar cheese
    • 2 cups shredded Monterey Jack cheese
  3. Other Layers:
    • 1 can (10 oz) enchilada sauce or salsa
    • 8-10 small flour or corn tortillas
    • 1 can (4 oz) diced green chilies (optional)
    • 1/2 cup chopped fresh cilantro (optional)
  4. Toppings (optional):
    • Sour cream
    • Sliced jalapeños
    • Diced tomatoes
    • Avocado slices
    • Chopped green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground meat until browned. Add onions and garlic, and sauté until translucent.
  3. Stir in the taco seasoning, followed by the black beans and corn. Cook until everything is well-combined and heated through. Remove from heat.
  4. In a 9x13-inch baking dish, spread a thin layer of enchilada sauce or salsa.
  5. Place a layer of tortillas over the sauce, overlapping if necessary.
  6. Add a layer of the meat mixture, followed by a sprinkle of both cheeses.
  7. Continue layering in this order: sauce, tortillas, meat, cheese, until all ingredients are used up, finishing with a generous layer of cheese on top.
  8. Spread diced green chilies on top if using.
  9. Cover with aluminum foil and bake in the preheated oven for about 25 minutes.
  10. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  11. Remove from oven and let it cool for 10 minutes before slicing. Garnish with chopped cilantro if desired.
  12. Serve with your choice of toppings.
