Ingredients
- Meat Layer:
- 1 lb ground beef or turkey
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- Cheese Layer:
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- Other Layers:
- 1 can (10 oz) enchilada sauce or salsa
- 8-10 small flour or corn tortillas
- 1 can (4 oz) diced green chilies (optional)
- 1/2 cup chopped fresh cilantro (optional)
- Toppings (optional):
- Sour cream
- Sliced jalapeños
- Diced tomatoes
- Avocado slices
- Chopped green onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground meat until browned. Add onions and garlic, and sauté until translucent.
- Stir in the taco seasoning, followed by the black beans and corn. Cook until everything is well-combined and heated through. Remove from heat.
- In a 9x13-inch baking dish, spread a thin layer of enchilada sauce or salsa.
- Place a layer of tortillas over the sauce, overlapping if necessary.
- Add a layer of the meat mixture, followed by a sprinkle of both cheeses.
- Continue layering in this order: sauce, tortillas, meat, cheese, until all ingredients are used up, finishing with a generous layer of cheese on top.
- Spread diced green chilies on top if using.
- Cover with aluminum foil and bake in the preheated oven for about 25 minutes.
- Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
- Remove from oven and let it cool for 10 minutes before slicing. Garnish with chopped cilantro if desired.
- Serve with your choice of toppings.
