Ingredients

  • 2 cups elbow macaroni
  • 1 lb ground beef or chorizo
  • 1 packet (1 oz) taco seasoning
  • 1 can (4 oz) diced green chilies
  • 1/2 cup diced tomatoes (optional)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Optional toppings: cilantro, jalapeños, sour cream, salsa

Instructions

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large skillet, cook ground beef or chorizo over medium heat until browned. Drain excess fat. Stir in taco seasoning and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
  • Slowly whisk in milk and cumin, stirring until the mixture thickens, about 3-4 minutes.
  • Gradually add shredded cheddar and pepper jack cheese, stirring until melted and smooth.
  • Stir in diced green chilies and optional diced tomatoes.
  • Combine the cooked macaroni, cheese sauce, and seasoned meat in a large pot. Mix until well coated.
  • Season with salt and pepper to taste. Serve with your favorite toppings like cilantro or jalapeños.

Notes

  • For a vegetarian version, omit the meat and add black beans or corn for extra texture.
