Ingredients
- 12 oz pasta (rotini or penne)
- 2 cups corn kernels (grilled or roasted)
- 1/2 cup crumbled cotija cheese
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine corn, cotija cheese, red onion, and cilantro.
- In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Add cooled pasta to the large bowl and pour the dressing over the top. Mix well.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
