Instructions

  1. In a mixing bowl, combine sweet rice flour, sugar, baking powder, and salt.
  2. Gradually add the water or milk and melted butter, mixing continuously until a sticky dough forms.
  3. Turn the dough out onto a surface dusted with sweet rice flour.
  4. Knead the dough briefly until it's smooth.
  5. Divide the dough into small portions and roll them into balls.
  6. To form the signature mochinut shape, combine several balls into a ring, pressing them together gently.
  7. Heat oil in a deep-fryer or deep saucepan to 350°F (175°C).
  8. Carefully fry the mochi rings until they turn golden brown, turning them once during frying. This usually takes about 2-4 minutes.
  9. Remove from oil and let them drain on a wire rack or paper towels.
  10. For the glaze, mix powdered sugar, milk or water, vanilla extract, and any other desired flavorings or colors until smooth.
  11. Dip the fried mochinuts into the glaze and set them on a wire rack to let the excess drip off.

Notes
