Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp butter
- 1 cup sliced mushrooms (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated Asiago cheese
- ½ tsp dried thyme
- ½ tsp paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt, pepper, paprika, and thyme.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4-5 minutes on each side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, melt butter and add mushrooms. Sauté for 4-5 minutes until tender and golden. Add garlic and cook for 30 seconds until fragrant.
- Stir in heavy cream and chicken broth, scraping up any browned bits from the skillet. Let the sauce simmer for 2-3 minutes to thicken slightly.
- Add Asiago cheese to the sauce, stirring until melted and creamy. Season with additional salt and pepper if needed.
- Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for 3-4 minutes until the chicken is warmed through.
- Garnish with fresh parsley and serve immediately.
Notes
- For extra flavor, add a splash of white wine to the sauce before simmering.
- Serve with pasta, mashed potatoes, or steamed vegetables for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
