Ingredients
- 4 boneless, skinless chicken breasts
- 6 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large skillet over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving the bacon fat in the skillet.
- Season chicken breasts with salt and pepper. Add olive oil to the skillet and cook chicken breasts in the bacon fat for 5-7 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add diced onion and cook until softened, about 3 minutes. Add minced garlic and cook for another minute.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 5 minutes until the sauce thickens.
- Stir in the grated Parmesan cheese until melted and combined. Return the chicken and bacon to the skillet, coating them in the creamy sauce.
- Garnish with fresh parsley and serve hot.
