Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 ½ cups uncooked pasta (penne or rotini)
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and garlic, cooking until softened.
- Stir in taco seasoning, diced tomatoes, and beef broth. Bring to a simmer.
- Add uncooked pasta, cover, and cook for 12-15 minutes, stirring occasionally.
- Once pasta is tender, stir in shredded cheese and sour cream until melted and creamy.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro if desired. Serve hot.
