Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 1 tbsp Cajun seasoning (plus extra for taste)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta (uncooked)
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken and season with Cajun seasoning. Cook until golden and fully cooked.
  • Add the sliced bell peppers and garlic to the pot. Sauté for 2-3 minutes until softened.
  • Stir in chicken broth, heavy cream, and uncooked penne pasta. Mix well and bring to a boil.
  • Reduce heat to low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
  • Remove from heat and stir in parmesan cheese. Adjust seasoning with salt, pepper, or additional Cajun spice as needed.
