This One Pot Cajun Chicken Pasta recipe is the ultimate comfort meal! Creamy, spicy, and packed with tender chicken, pasta, and Cajun spices.
Ingredients
- 2 tbsp olive oil
- 2 chicken breasts, diced
- 1 tbsp Cajun seasoning (plus extra for taste)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne pasta (uncooked)
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and season with Cajun seasoning. Cook until golden and fully cooked.
- Add the sliced bell peppers and garlic to the pot. Sauté for 2-3 minutes until softened.
- Stir in chicken broth, heavy cream, and uncooked penne pasta. Mix well and bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
- Remove from heat and stir in parmesan cheese. Adjust seasoning with salt, pepper, or additional Cajun spice as needed.
- Garnish with parsley and serve hot.
