Ingredients

  • 1 lb chicken breasts, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream (or milk for a lighter option)
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • Optional: Lemon zest or juice for garnish

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat.
  • Season diced chicken with salt, pepper, and Italian seasoning. Add chicken to the pan and cook until browned on all sides, about 5 minutes. Remove and set aside.
  • In the same pan, sauté onions until softened, about 2 minutes. Add garlic and cook for another 30 seconds.
  • Stir in orzo pasta and toast for 1 minute.
  • Pour in chicken broth and bring to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until orzo is tender.
  • Stir in heavy cream, spinach, Parmesan cheese, and cooked chicken. Cook for another 2-3 minutes until creamy and heated through.
  • Adjust seasoning with more salt, pepper, or lemon zest if desired. Serve immediately.

  • Substitute spinach with kale or peas for variety.
  • Use rotisserie chicken to save time.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat with a splash of milk or broth to loosen the sauce.
