Ingredients
- 1 lb chicken breasts, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup uncooked orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream (or milk for a lighter option)
- 1 cup spinach, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- Optional: Lemon zest or juice for garnish
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Season diced chicken with salt, pepper, and Italian seasoning. Add chicken to the pan and cook until browned on all sides, about 5 minutes. Remove and set aside.
- In the same pan, sauté onions until softened, about 2 minutes. Add garlic and cook for another 30 seconds.
- Stir in orzo pasta and toast for 1 minute.
- Pour in chicken broth and bring to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until orzo is tender.
- Stir in heavy cream, spinach, Parmesan cheese, and cooked chicken. Cook for another 2-3 minutes until creamy and heated through.
- Adjust seasoning with more salt, pepper, or lemon zest if desired. Serve immediately.
