Ingredients

  • 2 tbsp butter
  • 2 large onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef or vegetable broth
  • 1 cup water
  • 1 cup heavy cream
  • 12 oz uncooked pasta (fettuccine, linguine, or penne)
  • 1 cup shredded Gruyère or Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh thyme or parsley for garnish (optional)

Instructions

  • Melt butter in a large pot over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring frequently, for 15 minutes or until onions are caramelized.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Add beef broth, water, and heavy cream to the pot. Bring to a boil.
  • Add uncooked pasta, reduce heat to a simmer, and cook for 10-12 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  • Stir in Gruyère and Parmesan cheese until melted and creamy.
  • Garnish with fresh thyme or parsley and serve immediately.
