Ingredients
- 2 tbsp butter
- 2 large onions, thinly sliced
- 2 garlic cloves, minced
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups beef or vegetable broth
- 1 cup water
- 1 cup heavy cream
- 12 oz uncooked pasta (fettuccine, linguine, or penne)
- 1 cup shredded Gruyère or Swiss cheese
- 1/2 cup grated Parmesan cheese
- Fresh thyme or parsley for garnish (optional)
Instructions
- Melt butter in a large pot over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring frequently, for 15 minutes or until onions are caramelized.
- Stir in garlic and cook for 1 minute until fragrant.
- Add beef broth, water, and heavy cream to the pot. Bring to a boil.
- Add uncooked pasta, reduce heat to a simmer, and cook for 10-12 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
- Stir in Gruyère and Parmesan cheese until melted and creamy.
- Garnish with fresh thyme or parsley and serve immediately.
Notes
- For extra flavor, deglaze the pot with 1/4 cup white wine before adding the broth.
- Use whole-grain or gluten-free pasta for a healthier option.
