  2. 1 tbsp olive oil
  3. 1 onion, diced

  7. 1 can (15 oz) dark red kidney beans, drained and rinsed
  8. 1 can (15 oz) white navy beans or cannellini beans, drained and rinsed
  9. 4 cups chicken or vegetable broth
  10. 2 tsp ground cumin
  11. 1 tsp chili powder
  12. 1/2 tsp smoked paprika
  13. 1/2 tsp oregano
  14. Salt and pepper to taste
  15. Optional toppings: sour cream, cheddar cheese, chopped green onions, cilantro

Instructions

  1. Brown the Turkey: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it apart, until browned and cooked through. Remove the turkey and set aside.
  2. Sauté Vegetables: In the same pot, add a bit more oil if needed, then sauté the diced onion and bell pepper until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Combine Ingredients: Return the browned turkey to the pot. Add the diced tomatoes, kidney beans, white beans, chicken or vegetable broth, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Stir well to combine.
  4. Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to meld.
  5. Serve: Check for seasoning and adjust if necessary. Serve hot with optional toppings if desired.
