Ingredients

  • 1 lb pasta (like penne, rigatoni, or fusilli)
  • 1 lb andouille sausage, sliced
  • 1 lb chicken breast or thigh, cut into bite-sized pieces
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley and green onions, for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or Dutch oven, heat olive oil over medium heat. Add the chicken and sausage. Cook until the chicken is browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add the onion, bell peppers, and celery. Sauté until the vegetables are softened, about 5 minutes.
  4. Add the garlic and cook for an additional minute.
  5. Stir in the Cajun seasoning, smoked paprika, thyme, oregano, and cayenne pepper. Cook for about 2 minutes to release the flavors.
  6. Add the diced tomatoes with their juice and chicken broth. Bring to a simmer.
  7. Return the cooked chicken and sausage to the pan. Reduce the heat and let it simmer for 10 minutes.
  8. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce and heated through.
  9. Season with salt and black pepper to taste.
  10. Garnish with chopped parsley and green onions before serving.
