Savor the delightful combination of fresh peaches and a buttery crust in these Peachy Keen Bars. Perfect for summer gatherings, these bars are easy to make and full of flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 4 cups fresh peaches, peeled and sliced
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, mix together flour, granulated sugar, brown sugar, baking powder, and salt.
  • Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Mix in the egg until just combined.
  • Press half of the dough mixture into the prepared baking dish to form the crust.
  • In another bowl, combine the sliced peaches, lemon juice, cornstarch, and cinnamon. Toss until the peaches are evenly coated.
  • Spread the peach mixture evenly over the crust.
  • Crumble the remaining dough mixture over the peaches.
  • Bake for 45-50 minutes, or until the top is golden brown and the peaches are bubbly.
  • Let the bars cool completely in the pan before cutting into squares.

Notes

  • For a shortcut, you can use canned peach pie filling instead of fresh peaches.
  • Serve with a scoop of vanilla ice cream for an extra treat.
