Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 4 cups fresh peaches, peeled and sliced
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, mix together flour, granulated sugar, brown sugar, baking powder, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Mix in the egg until just combined.
- Press half of the dough mixture into the prepared baking dish to form the crust.
- In another bowl, combine the sliced peaches, lemon juice, cornstarch, and cinnamon. Toss until the peaches are evenly coated.
- Spread the peach mixture evenly over the crust.
- Crumble the remaining dough mixture over the peaches.
- Bake for 45-50 minutes, or until the top is golden brown and the peaches are bubbly.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- For a shortcut, you can use canned peach pie filling instead of fresh peaches.
- Serve with a scoop of vanilla ice cream for an extra treat.
