Ingredients
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup mini chocolate chips
Instructions
Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with mini paper cups.
In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
Beat in egg and vanilla extract until fully combined.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually mix dry ingredients into the wet mixture.
Fold in mini chocolate chips.
Scoop dough into prepared muffin tin, filling each cup about 3/4 full.
Bake for 10–12 minutes or until edges are golden and centers are set.
Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra gooey centers, underbake by 1 minute.
Top with a chocolate kiss or drizzle with melted chocolate for flair.
Store in an airtight container for up to 5 days.
