Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp unsalted butter (melted)

  • 16 oz cream cheese (softened)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Pecan Pie Topping:

  • 1 cup pecans (chopped)
  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 2 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 large eggs

Instructions

  • Preheat the Oven:
    Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  • Make the Crust:
    • In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom of the prepared baking pan.
    • Bake for 8-10 minutes, then set aside to cool.
  • Prepare the Cheesecake Layer:
    • In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
    • Add eggs one at a time, beating after each addition.
    • Mix in the vanilla extract.
    • Pour the cheesecake mixture over the baked crust and smooth the top.
  • Make the Pecan Pie Topping:
    • In a medium bowl, whisk together brown sugar, corn syrup, melted butter, vanilla extract, salt, and eggs until fully combined.
    • Stir in chopped pecans.
    • Gently spoon the pecan mixture over the cheesecake layer.
  • Bake:
    • Bake for 35-40 minutes, or until the center is set.
    • Allow the bars to cool completely, then refrigerate for at least 2 hours before slicing into squares.
  • Serve:
    • Cut into bars and enjoy! Store leftovers in the refrigerator.
