Ingredients
1 lb boneless, skinless chicken breasts (cubed)
1 tbsp olive oil
1 package (20 oz) refrigerated cheese tortellini
1 cup cherry tomatoes, halved
1 cup zucchini, sliced
1 cup bell pepper, sliced (any color)
1/2 cup pesto sauce (store-bought or homemade)
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions
Cook the tortellini according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and sauté until fully cooked, about 6-8 minutes.
Add zucchini, bell pepper, and cherry tomatoes. Cook for 4-5 minutes until veggies are tender.
Add cooked tortellini to the skillet, then stir in pesto sauce until everything is well coated.
Sprinkle Parmesan cheese on top and stir gently.
Serve hot, garnished with fresh basil if desired.
