Description

This pineapple BBQ meatballs recipe is a delicious mix of sweet and savory flavors. Juicy meatballs are coated in a tangy barbecue sauce and paired with pineapple chunks for the perfect appetizer or main dish. Quick and easy to make, these meatballs are ideal for parties, game days, or family dinners.

Ingredients

  • 1 lb ground beef or pork (or a mix)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup BBQ sauce
  • 1 can (20 oz) pineapple chunks, drained
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • 1 tbsp olive oil (for frying, if pan-cooking)

Instructions

  • In a bowl, mix ground meat, breadcrumbs, egg, milk, garlic, salt, and pepper. Form into small 1-inch meatballs.
  • Heat olive oil in a skillet over medium heat (or bake meatballs at 400°F for 15-18 minutes). Cook meatballs until browned and fully cooked, about 7-8 minutes.
  • In a saucepan, combine BBQ sauce, soy sauce, brown sugar, apple cider vinegar, and paprika. Heat on medium until well mixed.
  • Add cooked meatballs and pineapple chunks to the sauce. Simmer for 5-7 minutes, stirring occasionally, until everything is heated through and the sauce thickens.
  • Serve hot as an appetizer or over rice as a main dish.

Notes

  • Use frozen meatballs for a quicker version; just heat them up and add to the BBQ pineapple sauce.
  • Customize by using chicken, turkey, or plant-based meatballs for different dietary needs.
