Ingredients

  • 3 cups shredded cooked chicken
  • 12 corn tortillas, torn into pieces
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 can Rotel (diced tomatoes with green chiles)
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, sauté the chopped onion until soft.
  • Mix in the shredded chicken, cream of chicken soup, Rotel, chicken broth, cumin, chili powder, salt, and pepper.
  • In a greased 9x13 inch casserole dish, layer half of the torn tortillas, followed by half of the chicken mixture, and sprinkle with cheddar cheese.
  • Repeat the layers and top with the remaining cheese.
  • Bake in the preheated oven for 30-35 minutes or until the cheese is melted and bubbly.
  • Garnish with cilantro, if desired, and serve hot.
