Ingredients
- 3 cups shredded cooked chicken
- 12 corn tortillas, torn into pieces
- 2 cups shredded cheddar cheese
- 1 can cream of chicken soup
- 1 can Rotel (diced tomatoes with green chiles)
- 1 cup chicken broth
- 1 onion, chopped
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté the chopped onion until soft.
- Mix in the shredded chicken, cream of chicken soup, Rotel, chicken broth, cumin, chili powder, salt, and pepper.
- In a greased 9x13 inch casserole dish, layer half of the torn tortillas, followed by half of the chicken mixture, and sprinkle with cheddar cheese.
- Repeat the layers and top with the remaining cheese.
- Bake in the preheated oven for 30-35 minutes or until the cheese is melted and bubbly.
- Garnish with cilantro, if desired, and serve hot.
