Ingredients

For the Cake:

  1. 1 3/4 cups all-purpose flour
  2. 1 1/2 tsp baking powder
  3. 1 1/2 tsp baking soda
  4. 3/4 cup unsweetened cocoa powder
  5. 2 cups granulated sugar
  6. 2 large eggs
  7. 1 cup milk
  8. 1/2 cup vegetable oil
  9. 2 tsp pure vanilla extract
  10. 1 cup boiling water

For the Chocolate Ganache:

  1. 1 cup heavy cream
  2. 8 oz dark chocolate, chopped

Instructions

  1. Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and sugar. Add in eggs, milk, vegetable oil, and vanilla extract. Beat until well combined. Carefully mix in the boiling water until smooth. The batter will be runny.
  3. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in pans for about 10 minutes. Then transfer to a wire rack to cool completely.
  4. Prepare the Ganache: In a saucepan, heat the heavy cream until it's just about to boil. Remove from heat and pour over the chopped chocolate. Let it sit for a minute and then whisk until smooth.
  5. Once the cakes are completely cooled, place one cake on a serving plate. Pour half of the ganache over the top, spreading evenly. Place the second cake on top and pour the remaining ganache over the top and sides of the cake.
