Ingredients

  • 1 lb kielbasa sausage, sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
  • In the same pot, sauté the onion, garlic, carrots, and celery until softened.
  • Add diced potatoes and paprika, stirring to coat.
  • Pour in chicken broth and bring to a boil. Lower the heat and simmer for 20 minutes, or until the potatoes are tender.
  • Stir in the heavy cream and return the kielbasa to the pot. Simmer for another 5 minutes.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.

Notes

  • You can use smoked sausage as a substitute for kielbasa for a different flavor profile.
  • For a thicker consistency, mash some of the potatoes before adding the cream.
