Ingredients
- 1 lb kielbasa sausage, sliced
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
- In the same pot, sauté the onion, garlic, carrots, and celery until softened.
- Add diced potatoes and paprika, stirring to coat.
- Pour in chicken broth and bring to a boil. Lower the heat and simmer for 20 minutes, or until the potatoes are tender.
- Stir in the heavy cream and return the kielbasa to the pot. Simmer for another 5 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
Notes
- You can use smoked sausage as a substitute for kielbasa for a different flavor profile.
- For a thicker consistency, mash some of the potatoes before adding the cream.
